About 20 years ago I visited a small town called Martel in the South West of France. A seed was sown when I sat with my wife and had a glass of local Bergerac wine with a salad of duck confit. Food and wine, simple in presentation, but of the highest quality.

We began to holiday in the Basque region (the 64 region of France), with each meal and each glass of wine inspired. Finally we sat in a restaurant owned by the iconic Michel Guerard in Eugenie Les Bains. I had charcoal roasted beef and a glass of Chateau Aydie. It was perfect. It was served in a barn by someone who loved their job and the meal they served.

My dream, yet to be fulfilled,was to recreate that understanding between simple, quality food and wine, served in a place like home, served by people you would be happy to treat as a friend.

We are nearly there, but dreams are strange, they rest somewhere between an illusion and a folly, but I am determined to make it a reality.
